Cod with Pea and Mint Pesto Pasta
Fresh veggies, lemon and a refreshing, flavorful mint pesto make this cod pesto pasta dish perfect for the summer season
Cod with Pea and Mint Pesto Pasta

Ingredients
- 4 oz. linguine
- 2 cups/8 oz. green beans
- 4 cod fillets 3 oz. each
- 1/4 tsp. each salt and pepper
- 1 tbsp. olive oil
- Lemon wedges optional
Pea and Mint Pesto:
- 1/2 cup/2.5 oz. thawed frozen peas or steamed fresh shelled peas
- 3 tbsp. olive oil
- 3 tbsp. finely chopped fresh mint
- 2 tbsp. finely chopped fresh parsley
- 1 tsp. lemon zest
- 2 tbsp. lemon juice
- 1 clove garlic minced
- 1/4 tsp. each salt and pepper
- Pinch hot pepper flakes
Instructions

Cook pasta according to package directions, adding green beans in the last 2 minutes of cooking time. Drain and set aside.

Pea and Mint Pesto: Meanwhile, in food processor, pulse peas, olive oil, mint, parsley, lemon zest, lemon juice, garlic, salt, pepper and hot pepper flakes until puréed. Toss with pasta and green beans.

Season cod fillets with salt and pepper. Heat oil in large nonstick skillet set over medium-high heat; cook fillets for 3 to 4 minutes per side or just until fish flakes easily when tested with a fork.

Divide pasta mixture among 4 bowls. Top each with cod fillet. Serve with lemon wedges (if using). Top pasta with grated Parmesan cheese, if desired.
