Borscht Pasta Salad Recipe

This healthy pasta salad is a twist on borscht – the classic Eastern European soup – that’s as bright and beautiful as it is tasty and nutritious. It’s easy to pack up and take with you for lunch or a picnic!

Directions:

  1. Cook campanelle according to package directions. Drain and let cool completely.
  2. Meanwhile, stir together 1/3 cup yogurt, lemon juice, oil, 1 tbsp dill, mustard, garlic, salt and pepper. Toss with pasta.
  3. Stir in shredded beets and red onion. Serve with dollop of remaining yogurt and sprinkle with remaining dill.

Tip:
Add 1/2 tsp. finely grated lemon zest to salad for a fresh finish.
