Looking to make a creamy pasta dish that’s still healthy?   Our friend, and Registered Dietitian Anne Mauney shared her Creamy Vegan Garlic & Herb Pasta that will do the trick!  Plus, this recipe only takes 20 minutes to make and is perfect for vegans.  Serve with protein to make this a main dish, or enjoy it as a side.

Serves 6-8


  • Cook pasta according to package directions.
  • Cook frozen peas according to package directions.
  • In a separate large pan, add olive oil and garlic and sauté over medium heat for a few minutes.
  • Add in cooked peas and fresh herbs and stir a few more minutes.
  • Add in cooked pasta and coconut milk. Let simmer until the coconut milk reduces into a thicker sauce.
  • Once pasta has reached desired consistency, add salt & pepper to taste. Serve warm or cold
