Make this light, delicious poached salmon dish as a tasty lunch or family meal. Follow a few easy steps and you’ll look like a pro in the kitchen!


  1. Bring a large pot of salted water to a boil. Cook the multi-grain penne according to package directions. Drain and reserve.
  2. To make the dill pesto place the dill, Parmigiano, garlic and lemon zest in the bowl of a food processor. With the motor running, drizzle in the olive oil. Process into a smooth paste. Season to taste with salt and pepper (optional). Reserve.
  3. To poach the fish bring another pot of salted water to a boil. There needs to be enough water to cover the fish. Place the fish in the water and simmer for 10 minutes. The fish should feel firm to touch.
  4. While the fish is cooking, toss the penne and the cherry tomatoes with about 2/3 of the dill pesto. Divide between 4 bowls.
  5. When the fish is cooked, spread the remaining pesto over the fish and place one fillet over each bowl of pasta.

Makes 4 servings. Per serving: 437 calories, 20 g total fat, 5 g saturated fat, 32 g carbohydrate, 31 g protein, 4 g dietary fiber, 3 gm sugar, 253 mg sodium, 49 mg cholesterol.
