You most likely have all of these ingredients in your pantry — so put them together in this Lemon Kale Pasta with Dried Cherries & Eggs meal. It’s filled with essential nutrients and will please warm or cold!


  1. Cook pasta according to package directions.
  2. Boil eggs.
  3. Shred kale and steam in microwave 4 minutes or until softened.
  4. In a large bowl, combine cooked pasta, cheese, shredded kale, dried cherries, chopped eggs, garlic, and mint.
  5. Add salt and pepper, to taste. Add lemon juice and olive oil and toss well to combine.
  6. Serve warm with more shredded cheese! Also good cold.
