Smoked Salmon and Mixed Bean Ziti

Smoked Salmon and Mixed Bean Ziti

Ingredients
- 4 oz. ziti
- 4 oz. green beans cut into 1″ pieces
- 1 Tbsp./½ oz. lemon juice
- 2 tsp. grainy mustard
- 2 tsp. honey
- 2 Tbsp./1 oz. extra virgin olive oil
- 1 15.5 oz. can kidney beans, drained
- ½ cup/½ oz. roughly chopped basil
- 4 oz. smoked salmon cut into thin strips
Instructions

Bring a large pot of salted water to a boil. Cook the ziti according to package directions. When the pasta is 3 minutes away from being done, drop in the green beans. Drain, rinse under cold water and reserve.

While the pasta is cooking, make the vinaigrette. In a large bowl, whisk together the lemon, mustard and honey. Slowly whisk in the oil.

Add the pasta, green beans, kidney beans and basil. Toss with the vinaigrette. Stir in the smoked salmon. Taste and adjust seasoning.
