Tropical Jerk Chicken Pasta Recipe

Give pasta a tropical taste with spicy jerk chicken, cooling coleslaw and mango. It’s a complete, flavorful meal made for summer days (or when you just want to pretend it’s summer!).


  1. Preheat oven to 375°F. Mix together vegetable oil, jerk seasoning and lemon juice.
  2. Cover and refrigerate chicken for 1 hour or up to overnight.
  3. Bake on greased foil-lined baking sheet for 25 to 30 minutes or until well glazed and internal temperature reaches 165°F.
  4. Meanwhile, cook pasta according to package directions. Drain, reserving 1/2 cup pasta liquid.
  5. Toss together pasta, pasta liquid, coleslaw mix, mango, cilantro, coleslaw dressing, salt and pepper. Serve chicken over pasta. Garnish with sliced red chili peppers if desired.
