Instead of bulgur, our take on the traditional Arabian dish of Tabouleh uses whole wheat orzo. Fresh vegetables and spices with a little olive oil and lemon juice this dish will impress your guest and  can be thrown together in no time!

Bring a large pot of salted water to the boil. Cook the orzo according to package directions. Drain and reserve.

Cool completely before adding scallions, cucumbers, parsley, mint, and other ingredients to the orzo. Toss well. Add salt and pepper to taste.

Makes 8 servings. Per serving: 195 calories, 9 g total fat, 1 g saturated fat, 26 g carbohydrate, 5 g protein, 4 g dietary fiber, 304 mg cholesterol, 304 mg sodium
