Pork and Shiitake Mushroom Pasta
It only takes a few ingredients and 30 minutes to whip up this tasty and filling pork and shiitake mushroom pasta meal!
Pork and Shiitake Mushroom Pasta

Ingredients
- 4 oz. gemelli pasta
- ¼ cup/2 oz. vegetable oil divided
- 2 cups/8 oz. onions sliced
- 2 cups/4 oz. shiitake mushrooms thinly sliced
- 2 Tbsp./1 oz. garlic finely chopped
- 4 cups/4 oz. mustard greens roughly chopped
- 12 oz. pork tenderloin sliced into approx. ¼” x 2” strips

Bring a large pot of salted water to the boil. Cook the gemelli according to package directions. Drain and reserve.

Heat a large sauté pan over medium heat. Add half of the oil. Sauté the onions until starting to caramelize, about 5 minutes. Add the shiitakes. Continue to cook until the mushrooms begin to brown and the onions become more caramelized, another 5 minutes. Stir in the garlic and mustard greens. Cook for about 1 minute so that the garlic is aromatic and the greens have wilted.

Turn up the heat to medium-high. Move the vegetables to one side of the pan. Add the remaining oil and cook the pork briefly just to cook through and get some browning, about 2 minutes. Toss everything together, including the pasta.

Season to taste with salt and pepper. Divide between 4 bowls.
