Whole Wheat Orzo Tabouleh

Ingredients

whole wheat orzo
¾
cup/½ oz. thinly sliced scallions

cups/7 ½ oz. chopped hothouse cucumber

cup/1 oz. roughly chopped parsley

cup/ ½ oz. finely chopped mint

cups/12 oz. roughly chopped tomatoes

tsp.
grated garlic

cup/2 oz. lemon juice

extra virgin olive oil
Instructions
Bring a large pot of salted water to the boil. Cook the orzo according to package directions. Drain and reserve.
Cool completely before adding scallions, cucumbers, parsley, mint, and other ingredients to the orzo. Toss well. Add salt and pepper to taste.
