1lb.SpaghettiLinguine (or your favorite pasta shape), uncooked*
110 oz. package frozen spinach, thawed, well drained
2tbsp.vegetable oil
1/4cupgrated Parmesan cheese
2tbsp.chopped parsley
2clovesgarlic
1/2tsp.salt
1/2tsp.dried basil
2tbsp.margarineor butter
1/3cupwater
4oz.crumbled feta cheese
Instructions
Prepare pasta according to package directions; drain and set aside.
In a blender (or food processor), combine spinach, oil, Parmesan cheese, parsley, garlic, salt and basil. Mix at medium speed until finely chopped. Melt margarine in water. With blender or processor running, gradually pour in melted margarine mixture until blended.
Toss pesto with pasta. Sprinkle feta on top and serve.
